Disneyland complete menu items and prices from 1998

I used to work at Cafe Orleans (and later, French Market) at Disneyland. I started in 1987, and in those days even the world’s premiere theme park was pretty analog. There was no such thing as the Internet for everyday people, and even the workers didn’t have complete information. As I worked there, fielding questions from visitors about what to eat around the park, I realized what I needed was a guide to everything. But Disney didn’t make that, so I made my own, traveling around the park restaurants and writing (in longhand) the menu items and prices. I didn’t share it with anyone, and as I became Working Lead (hourly manager) it became less needed in my day to day life, so I didn’t keep it current.

Once I got active on the Internet in 1996, one of the first websites I built (geocities, of course!) was about the restaurants in New Orleans Square, and my various stories. A couple of years later I revived my old project about park menus and prices, and created it digitally. Geocities is gone now, but I kept the old HTML files and will paste them here into this post to give the world an archive of prices from 1998. Watch for recipes and an index at the end.

 

Main Street Restaurants

 

Restaurants:

Carnation Cafe. After the 1997 rehab, the Carnation restaurant reopened with reduced indoor seating and a smaller outdoor patio. Most significantly, it had a new menu, one without the famous “Matterhorn Sundae” and other favorite ice cream treats. It remains table-service, however, and the portions are enormous. Originally sponsored by Carnation, Disneyland now “loans” the name from the Carnation company.

Location

Halfway up Main Street, on the west side, you will find the outdoor terrace and entrance to the Carnation Cafe.

Plaza Inn. From 1955 until 1965, it was actually called the Red Wagon Inn. One of the premiere buffeterias at Disneyland, the PI serves traditional American fare. Sponsored by Columbian Coffee Growers.

Beginning January 1999, the Plaza Inn will be transformed into “Scramble Service” like Redd Rockett’s Pizza Port and will no longer be a buffeteria. The good news is that the decor will remain posh and largely untouched in deference to Walt, who helped design the PI at the beginning. Another bonus: lines will soon be much faster at this facility. And they will be keeping some menu items, as well as importing some from the Plaza Pavilion. The bad news: it will likely be deemed fast-food, more or less, and thus not qualify for Annual Passport or Magic Kingdom Club discounts.

Location

The Plaza Inn is located on the border between Main Street and Tomorrowland, and is usually the last buffeteria in Disneyland to close.

Plaza Pavilion. The Plaza Pavilion is the other buffeteria at the end of Main Street, specializing in pastas. Unfortunately, it’s often not open for business unless it’s a very busy day. In fact, the odds are good that the Pavilion might never reopen its doors. Sponsored by Contadina.

Location

Sitting between Main Street and Adventureland, the Pavilion building and kitchen is actually much larger than you would think. The Tahitian Terrace/Aladdin’s Oasis, as well as the Tiki Room show building, all share a common roof with the Pavilion – have a look at that roof sometime to see how the Main Street theming segues into the Adventureland theming.

Town Square Cafe (Extinct). When Disneyland opened in 1955, this was the Maxwell House Coffee House, and by 1958 it had become the Hills Brothers Coffee House. That was destined to change, and by 1978 it was replaced with the American Egg House. In 1983, and until its closure in 1993, the restaurant, which was full service and specialized in breakfast, was known as the Town Square Cafe.

Location

The Town Square Cafe was located near the current home of the Disney Showcase, roughly in the neighborhood of Mr. Lincoln’s Opera House.

 

 

 

 

 

Counter-Service:

Refreshment Corner. Once called Coke Corner, this fast-food operation opens early and closes very late, to the ragtime piano performance of Rod Miller. Sponsored by Coca-Cola.

Location

Coke Corner is located at the very end of Main Street, adjacent to the Plaza Pavilion. At Disneyland’s closing time, it’s hard to miss, as it’s the only food location still open.

Blue Ribbon Bakery. A 1990 addition to Main Street, the Bakery serves breakfast items and can have quite a line in the early morning, particularly if Main Street is open before the rest of Disneyland. Sponsored by Nestle Toll House.

Location

The Bakery is currently located between the Carnation Cafe and the Gibson Girl Ice Cream Parlor on the west side of Main Street. In the mornings, with the big crowd there, it’s difficult to miss.

Gibson Girl Ice Cream Parlor. Originally, this location was the Puffin Bakery, until it became the Sunkist Citrus House in 1960. In 1990, the Blue Ribbon Bakery took its place, but that moved down the street in 1997 (where it remains today) to make room for the newly created Gibson Girl Ice Cream Parlor. Sponsored by Nestle Ice Cream.

Location

Halfway up Main Street on the west side, the Gibson Girl parlor can be difficult to spot. It’s next to the Carnation Cafe and Blue Ribbon Bakery.

Little Red Wagon. The inspiration for the Plaza Inn’s first moniker, the Wagon has such a limited menu yet always seems to attract people for its wonderful corn dogs.

Location

The Little Red Wagon is located between the Plaza Inn and the rest of Main Street – that would be on the east side of Main Street.

Main Street Fruit Cart. The first fruit cart visible on your trip into Disneyland remains for many the most visible. I believe this location is not open for business during parades.

Location

Halfway up Main Street on the east side, and just opposite the Carnation Cafe.

Main Street Cone Shop. Seldom open unless crowds are heavy and the weather is hot, the Cone Shop is difficult to find, but worthwhile if you’re seeking a quick fix for your ice cream obsession.

Next to the Main Street Lockers, the Cone Shop can be found halfway up Main Street on the east side.

Redd Rockett’s Pizza Port. Opened in 1998 on the former site of Mission to Mars/Mission to the Moon, Redd’s has delicious food served in large quantities. Although it has many qualities of a buffeteria, it is classified as fast food, so your various discounts will not work here. Nick and Amber have also constructed a webpage dedicated to Redd’s.

Location

Redd’s is located between Innoventions and the Imagination Institute (“Honey, I Shrunk” theater). It has very large indoor, outdoor, and lounge seating areas.

Tomorrowland Terrace. When Disneyland opened in 1955, this restaurant was called the Yacht and Club Bar but adopted its current name in 1966 (it’s also known as Coke Terrace, even though Coca-Cola is no longer its sponsor). Orignally, it was called the Yacht Bar to fit in with the theme of the nearby Phantom Boats (which disappeared after that first summer). Soon after adopting its “rocket” theme in the 60′s, TLT had fun with its themed menu items: food items were “solid fuel” and beverages were “liquid fuel.” The 70′s and 80′s saw the arrival of the popular “Moonburger.”

Location

Located right in the middle of Tomorrowland, Coke Terrace is roughly between the Monorail station and Star Tours. Actually, it’s kind of hard to miss. It’s the big restaurant with the rising/sinking stage.

Space Place (Extinct). From 1977 until 1995, the Space Place offered fast food and salads with counter service. I remember most notably their cottage fries, nicely seasoned. Remants of the food counter can still be seen at the end of the hallway where the Space Mountain line begins (the serving area was the cul-de-sac still visible from the waiting zone for “Honey I Shrunk the Audience”).

 

 

 

 

Counter-Service:

The Lunching Pad (Extinct). Originally called “The Space Bar” between 1967 and 1977, this counter location served punch (a.k.a. “Space Mist”) and small snacks. Then, 1977, the restaurant “Space Place” opened next to the new Space Mountain and the Lunching Pad received its new name. It closed in 1997 for the Tomorrowland rehab and the area it occupied became the home of Radio Disney.

 

 


 

Space Bar (Extinct). From 1955 until 1966, the Space Bar was located roughly where the Carousel of Progress/America Sings/Innoventions later took up residence. The snack stand with the same name (see above) did not open until this restaurant had closed.

 

 


 

Dairy Bar (Extinct). This was removed in 1958, when Tomorrowland received its first facelift. Apparently it was part of the “Hall of Exhibits” of the original Tomorrowland.

 

Fantasyland Restaurants

 

Restaurants:

Village Haus. Originally known as the Village Inn, the Village Haus served first burgers, then healthly burger-substitutes, and now offers pizza and burgers again. It is a fast-food counter-service restaurant with incredible volume – the lines never last long. Sponsored by Minute Maid.

Location

The Village Haus is in Fantasyland near the Big Thunder Trail to Frontierland, just opposite the former home of the Fantasyland Skyway.

Carnation Plaza Gardens (Extinct). Opened in 1956, closed September 13, 1998 (the last guests ever were Mark and Paulette Mozco). Home of Disneyland’s Big Band entertainment, the Plaza Gardens enjoyed a low profile and thus smaller lines. Served burgers, ice cream, and milkshakes with counter service. Sponsored by Carnation.

Location

Carnation might even be considered Main Street – it was located just east of Sleeping Beauty’s Castle, on the Frontierland side.

Counter-Service:

Meeko’s. This location was formerly known as Yumz when Videopolis opened in 1985 and then “Meeko’s” during the Pocahontas Stage Show (95-97). It reopened in 1998 next to the new Fantasyland Theater. Currently, it sports no name whatsoever, but its registers and receipts still proclaim the name to be “Meeko’s”. Apparently it’s real name is “Fantasyland Theatre Snack Stand” but no one calls it that.

Location

Situated inside the Fantasyland Theater, this place gets rather busy before, during, and after show times. Not a great place to stop by casually, as there will usually be crowds if the location is open. You might have shorter lines during the performances, however.

Fantasyland Fruit Cart. Another one of those healthy fruit carts, this one has something none of the others do: Beef Jerky. It also has nuts and trail mix packages.

Location

The Fruit Cart is located directly next to the exit for the Sleeping Beauty walk-thru. In other words, it’s on the backside of the Castle, in the courtyard.

Chicken of the Sea Pirate Ship (Extinct). Later changed to Captain Hook’s Galley in 1982, the Pirate Ship served tuna sandwiches and other snacks. It was dismantled in 1983, but pieces of the original still exist in the reconstructed Skull Rock/Pirate Ship in Disneyland Paris’ Adventureland.

Location

The Pirate Ship rested in a small lagoon next to Skull Rock, all of which was located near the present location of Dumbo’s Flying Elephants.

 

 


 

Welch’s Grape Fruit Stand (Extinct). Stewart Dimon reports that “the Grape Fruit Stand was located on the left side of Fantasyland, over where Snow White and Pinocchio are now. Originally, this was the Fantasyland Theatre which played a variety of shows, most recently (before the 1983 rehab of Fantasyland) it showed classic Disney short films. Outside of the theatre was the Welch’s Grape juice bar. They literally sold two items……Welch’s purple grape juice (in a clear plastic cup —- like the Mint Julep at the Mint Julep bar), and Frozen Grape Juice Bars (like a popsicle, except it was real frozen juice). This closed when FL was rebuilt.”

Bryan Walton also reports that “Welch’s not only sold purple grape juice, but they sold red grape juice and white grape juice as well. The stand was located to the left of the Fantasyland Theatre entrance. Fantasy Gift Faire (known to us CM’s as Fan I) was on the right of the entrance. We were shown plans for a beautifully themed Welch’s that would be built in the New Fantasyland, with lots of carved wood and the ends of great wooden barrels with spigots, like you would find in a French wine cellar, but for reasons unknown to me (perhaps a pullout of the sponsor), the location was never built. Too bad.”

Ken Martinez adds that “Welch’s Grape Juice Bar was the only Fantasia themed establishment in Fantasyand. It had a hand-painted mural of centaurs and centaurettes and grape decor.”

 

 

 


 

Character Foods (Extinct). Ken Martinez comments that there were two such fast-food locations in Fantasyland: “one was located where Village Haus now stands, and the other where the Mad Hatter Shop now stands. The buildings roofs were shaped like giant parasols, like King Arthur’s Carousel. These food facilities served burgers, hot dogs, chili, fries and assorted beverages; The sandwiches usually had character names like the “Robin Hood”, etc.”

 

 

Toontown Restaurants

 

Counter-Service:

Clarabelle’s Frozen Yogurt. A fast-food counter service location, Clarabelle’s has few menu items and thus a fast-moving line.

Location

Clarabelle’s is located, like all Toontown restaurants, in the Downtown section (the middle section of the land). It is the “third” or “last” stand in a row, and stands next to the Towntown City Hall.

Daisy’s Diner. Daisy’s Diner is another of the quick counter-service locations in Toontown, themed naturally to Donald’s girlfriend Daisy.

Location

Daisy is the first food location you encounter when entering Toontown, and the first of three. It is the one located closest to Goofy’s Gas Station or Fantasyland.

Pluto’s Dog House. Pluto’s Dog House is yet another fast-food counter-service location in Toontown, with a theme geared toward “Dogs.” Here you can find, for instance, dog-shaped krispie treats instead of Mickey-shaped ones.

Location

Pluto’s is the middle store amid three consecutive fast-food locations, along the west side of the Toontown Downtown District.

Casa Mexicana. Until 1982 this restaurant was known as Casa di Fritos, as it was sponsored by Frito-Lay. It is a buffeteria/tray slide with some great spicy Mexican food. Until recently it was sponsored by Lawry’s.

Location

Casa Mexicana is located adjacent to Big Thunder Mountain Railroad, right in the middle of Frontierland.

Big Thunder Barbecue. Briefly known as the Festival of Foods during the lifespan of the nearby Hunchback of Notre Dame stage show, this buffeteria/tray slide originally opened in 1983 as part of the Big Thunder Ranch and Petting Zoo expansion of Frontierland. It features delicious barbecue chicken and ribs.

Location

The Barbecue is directly north of – “behind” – the Big Thunder Mt. Railroad, along the trail that leads into Fantasyland.

Westward Ho. This Conestoga-covered wagon is sponsored by McDonald’s and serves McDonald’s french fries. However, it is administered by DL Cast Members (specifically, from the Stagedoor Cafe). It opened November 16, 1998 to mixed reactions from the Internet crowd. The name is a reference to the Disney movie “Westward Ho the Wagons.” Here is the notice sent to Cast Members just before the wagon opened: [begin quote] “We’re very pleased that we will be offering our Guests McDonald’s world-famous french fries at Disneyland,” said Mike Berry, Vice President of Food Operations and Concept Development. Providing our Guests with high quality products from industry leaders like McDonald’s continues a tradition started by Walt Disney himself, who forged alliances with companies such as Carnation when the Park first opened. “In addition, McDonald’s has been a valued promotional partner with Disney for many years,” Mike added. Location

Westward Ho was, until November 1998, the name of a shop next to the Shooting Gallery. The french fry wagon of the same name is located at the exit to Big Thunder Mountain Railroad, along Big Thunder Trail.

Stagedoor Cafe. This was originally Oaks Tavern, until 1978, when it adopted its current name. A fast-food counter service location, Stagedoor has typical burgers and fries fare.

Stagedoor is located right next to the Golden Horseshoe building and faces Tom Sawyer’s Island. It shares an outdoor seating patio with the Riverbelle Terrace.

Don Defore’s Silver Banjo (Extinct). Apparently located next to Aunt Jemima’s Pancake House, this fast food location closed in 1961.

 

 


 

Delta Banjo (Extinct). Ken Martinez reports that the Delta Banjo was a separate food location from Don Defore’s Silver Banjo and operated in the era when the Oaks Tavern was open.

 

 


 

Tom Sawyer’s Island Cantina (Extinct). There was never much to purchase here – pickles, soda, and potato chips maybe – but it was better than nothing. Located inside Fort Wilderness on Tom Sawyer’s Island, the refreshment stand is simply no more.

 

Adventureland Restaurants

River Belle Terrace. Technically, the River Belle Terrace straddles both Adventureland and Frontierland – have a look at the roof shingles sometime (they have different theming on opposite sides of the building). Originally, it was Aunt Jemima’s Pancake House, until 1962, when it becameAunt Jemima’s Kitchen. In 1970, the name changed again and the place became known as the Magnolia Tree Terrace, but this name only lasted until 1971, when the restaurant was renamed the River Belle Terrace.

Location

The River Belle Terrace is located at the meeting point of Frontierland and Adventureland, and there are entrances to the building from either side. It is roughly opposite the bridge over Pirates of the Caribbean, and has a solid view of Tom Sawyer’s Island.

Aladdin’s Oasis (Extinct). Formerly known as Tahitian Terrace, this restaurant used to serve Pacific-Island style food. When it changed over in 1993, the emphasis became more exotic and themed to North African cuisine. Lack of interest had killed the location by 1996, and it became instead the host for “Story Time with Jasmine”.

Counter-Service:

Bengal Barbecue. Serving spicy meat skewers, the Barbecue is a favorite stop of many Disneyland guests. Before 1992 it was a completely different sort of place, sponsored by Sunkist, I Presume and featuring citrus drinks (Jungle Juleps = orange, lemon, and guava juice) and snacks such as doughnuts.

Location

The Bengal Barbecue is directly opposite the entranceway to Indiana Jones attraction.

Blue Bayou. Probably the most famous of all Disneyland restaurants, the Bayou boasts the best atmosphere and accordingly some of the highest prices. It is a full-service restaurant, and the only one in the Park that accepts reservations. You must make same-day reservations (they don’t accept them for the following day), so it’s not a bad idea to head there first to make your reservation (there is no outside phone number to call to do this). If you fail to make a reservation, you can still eat there as they hold some tables, but there is always a line. The food is excellent – mostly creole chicken dishes – and the service is top-notch. Don’t miss the Bayou!

Location

Many people have a hard time finding the Blue Bayou. You just have to know where to look, I guess. Its entrance is located directly next to the exit for Pirates of the Caribbean (just opposite the Pirates Merchandise shop, Pieces of Eight).

Location

The Cafe is the “other” outdoor restaurant, situated near the base of the Pirates bridge/Disney Gallery. Its entrance is on Royal Street, opposite Pieces of Eight.

Club 33. Yes, this “secret” location really does exist. And, yes, they do serve alcohol. It’s a members-only full-service restaurant, exquisitely upholstered and serviced by a wonderful and well-trained staff. Needless to say, it’s very expensive. And there is no way to eat there unless you become a member (there’s a waiting list) or know a member who can make your reservations.

Location

Anyone notice the non-descript door next to the Blue Bayou, labeled only “33″? That’s the way in – you ring the bell, give your name, and they release the door lock electronically. Then you ascend via glass elevator to the second floor – the main dining room is located directly above Cafe Orleans.

Fantasmic Dessert Balcony. Yes, I know, it’s not really a restaurant. But it does have “table” service (or “chair” service?) so it doesn’t really qualify as counter-service. This is the fabulous dessert service in the Disney Gallery Balcony while you watch Fantasmic. It’s not free – it costs a hefty $35 per person. But the view is literally unbeatable, the service is great, and the desserts/drinks are free and unlimited with purchase.

You will need reservations, and this sells out very quickly. You can only make same-day reservations, and they can only be made in person at the Guest Relations Window, just east of the Main Gate on the outside of Disneyland. Come VERY EARLY – I mean hours before scheduled Park opening, as it sells out virtually every day.

Location

The Balcony of the Disney Gallery is located above the Royal Street Veranda, roughly above the Pirates of the Caribbean entrance. You access the Balcony by announcing your reservation to the Gallery Cast Members.

Location

Located next to the Haunted Mansion, the Galley may be closed if it’s not a busy day at Disneyland. It is situated at the “harbor” where the big ships of the Rivers of America are docked when not in use.

Royal Street Veranda. A quick way to get your hands on fritters or clam chowder, the Veranda never seems to have much of a line. Of all the food locations in New Orleans Square, it will be the very last to close, as it’s so visible.

Located just under the Disney Gallery stairs and near the Pirates of the Caribbean entrance, the Veranda can be seen from most of the New Orleans Plaza, particularly if heading back from Critter Country.

Hungry Bear Restaurant. This restaurant opened in 1972 with the expansion of Disneyland to include Bear Country. At the time, it was known as the Golden Bear Lodge and didn’t receive its current name until Bear Country became Critter Country in 1988. Well-known as the two-tiered restaurant where you can feed the ducks on the Rivers of America, Hungry Bear features fast food and even faster service.

Location

Hungry Bear is right at the beginning of Critter Country, just opposite of Splash Mountain. It would be really difficult to miss Hungry Bear. The bathrooms and telephones on the lower level are among the least busy in the Park.

Here’s what you came to see: a webpage which lets you quickly answer questions about Disneyland’s food items by searching through a list arranged alphabetically. To get the prices of the items, you’ll have to check the location, because they differ occasionally. For example, to find out how much the Jambalaya at the Blue Bayou costs, you’ll need to click on “New Orleans Square” in the index on the left side of the screen. Restaurants at the hotels are labeled (DLH) for Disneyland Hotel and (DLP) for Disneyland Pacific.

This list will be updated as often as is practical, but constant changes throughout the dozens of restaurants and food locations in the Disneyland Resort may mean that some items listed here have been changed recently, so try to be understanding if your favorite item isn’t there once you arrive at the Park.

I have decided not to include items that are omnipresent, such as sodas, milk, coffee, bottled water, juice, hot tea, iced tea, and hot chocolate. You can safely assume that every single location in the park offers these items. Additionally, I chose not to bother with small tossed salads or chocolate chip cookies – the restaurants you suspect would have this do indeed have it.

Lastly, this list does not reflect items sold by mobile carts (Outdoor Vending). Their inventory changes too often for me to keep up, and it seems somehow irrelevant at any rate. However, I have included the “Fruit Carts” on my list. There have been many requests for Disney’s recipes, and you are welcome to request some
of me, but all I have are currently posted here (still, it never hurts to ask).

I am leery of posting too many recipes for legal reasons. Disney does offer several cookbooks,
and officially I should encourage you to purchase these (“Cooking with Mickey” is one
such book).

Choux Fritter Recipe

This recipe comes from guest courtesy cards, handed out to anyone who wanted
to know the fritter recipe.

 

 

Ingredients 

1/2 c. butter or margarine
1 c. water, boiling
1/4 tsp. salt
1 3/4 c. all-purpose flour
4 eggs
4 cups vegetable oil
granulated sugar

Directions 

Melt butter in boiling water, add salt and flour and beat vigorously. Remove from fire as soon
as mixture leaves side of pan. Transfer to mixer bowl, cool slightly. Add eggs, one at a time,
beating after each addition.

Heat oil to 375 degrees, dip tablespoon first in oil, then in batter and drop batter on paper
towels. Roll in granulated sugar and serve hot. Yield: 3 dozen.

Mint Julep Recipe

 

This recipe comes from “Cooking with Mickey Vol. I”

 

 

Ingredients 

1 cup Sugar
3 tsp. Lime Juice Concentrate
3 cups Soda Water
6 tbsp. Creme DeMenthe (hard to find, but this is important)
6 oz. thawed Lemonade Concentrate

Directions 

Dissolve sugar into soda water. Add lime juice and lemonade and bring to boil. 
Remove from heat and add Creme DeMenthe. Chill. To serve, combine 3 parts syrup 
to 5 parts water. Yield: Approx. 2/3 gallon.

Mint Julep Concentrate. A company called Bar None in Tustin California has been 
producing a "take-home" version of the julep: simply add water. This can be
bought either from Bar None or at the French Market/Mint Julep Bar.

Monte Cristo Recipe

 

This recipe was distributed to Annual Passholders in a recent newsletter and can
also be found in various cookbooks.

 

 

BATTER
1 1/2 Cups - All-purpose flour, sifted
1/4 Teaspoon - Salt
1 Tablespoon - Baking powder
1 1/3 cups - Water
1 - Egg

Sift flour, salt and baking powder together.  Add water to beaten egg, then
add to flour mixture and mix well.  Set aside.

SANDWICH
1 Ounce - Sliced white meat of turkey
1 Ounce - Sliced Swiss cheese
1 Ounce - Sliced ham
2 Slices - Egg Bread

Make a sandwich using turkey first, then Swiss cheese, and then ham.  Cut
sandwich into quarters using toothpicks to hold sandwich together.  Dip
sandwich in egg batter and fry in 360 degrees canola oil until golden
brown.  Remove toothpicks and sprinkle with powdered sugar.  Serve with
raspberry jelly.

Jambalaya

This recipe comes from Mickey’s Gourmet Cookbook.

 

 

Ingredients 

1 pound boneless pork, fresh, diced into 1/2 inch cubes
3 tablespoons vegetable oil
1/4 teaspoon black pepper, freshly ground
1/4 teaspoon thyme, dried
1/4 teaspoon garlic powder
1 16-ounce can tomatoes, crushed
4 cups water
1 1/4 cups rice, uncooked
2 chicken bouillon cubes
1 1/2 cups onion, diced
1 cup celery, diced
1 cup green bell pepper, diced
3/4 cup zucchini, diced
1 teaspoon yellow chili pepper
1/4 cup scallions, chopped
1 tablesoon parsley, chopped
1 cup ham, diced
1 cup Polish sausage, cooked, diced
1 cup Italian sausage, cooked, diced
1 cup okra, frozen, cut
1 1/2 cups small shrimp, cooked

Directions 

In a large saucepan, saute pork in oil over medium heat for 15 minutes, 
stirring occasionally. Add pepper, thyme, garlic powder, and tomatoes. 
Cover and cook for 15 minutes. Add water, ride, bouillon cubes, oinions, 
celery, green pepper, zucchini, chili peppers, scallions, and parsley. 
Bring to a boil. Stir to blend ingredients, cover and simmer for 10 to 15 
minutes. Stir once or twice and add remaining meat ingredients. Cook for 
another 10 minutes and add okra and shrimp. Heat well and serve hot. 
Yields 6 to 8 servings.

Disneyland’s Clam Chowder

Ingredients 

1/4 lb. butter
1 1/2 cups chopped onion
1 cup chopped celery
3/4 cup all purpose flour
1 quart milk
1 1/2 cups chopped clams, reserving juice
1/2 cup chopped green bell pepper
1/2 cup chopped red bell pepper
1 cube instant chicken broth
3/4 tsp. salt
1/4 tsp. white pepper
1/4 tsp. thyme
1 1/2 cups cooked and diced potatoes

Directions 

In a medium saucepan, melt butter; add onions, celery, red and green
peppers and thyme. Sautee until tender. Add flour and chicken broth cube;
cook over low heat for 5-10 minutes.

Add milk and reserved clam juice. Simmer for 20 minutes, stirring constantly. 
Add clams, potatoes, salt and pepper. Simmer for 5 minutes over low heat.

Yield: 4-6 servings.

12 oz. bittersweet chocolate
4 oz. unsalted butter
5 oz. egg whites
2 oz. sugar
3 1/2 cups of heavy cream

Directions 

In a double boiler combine chocolate and butter, stirring until melted.
Whip cream and supgar until light and fluffy; set aside. Beat egg whites at
high speed until soft peaks form. Using a wire whisk combine egg whites
with the melted chocolate and then with the whipped cream. Cover and
refrigerate overnight. 

Yield: 8 cups.

Bengal Barbecue Spicy Beef Skewers

 

This recipe comes from Sean, who has his own page of Disneyland Recipes, including Walt’s Chili and the Bayou Seafood.

 

 

Ingredients 

Yield 2 3/4 cups
Portion Size: 6

1 cup Soy Sauce
1 1/2 cups Water
1 Tbsp. Ground Black Pepper
3 Tbsp. Sesame Seed Oil
1 tsp. Ground Red Pepper
1/2 tsp. Cayenne Pepper
1 Tbsp. Granulated Garlic
3 Tbsp. Cornstarch
18 one-ounce pieces Sirloin Beef Chunks
6 Bamboo Skewers

 

Directions 

Combine all of the ingredients above and bring to a boil, adding cornstarch to thicken. Soak the bamboo skewers in water to avoid burning. Place 3 pieces of beef on each skewer and cook on the grill 3 minutes on each side or until desired doneness. Brush with sauce and serve.
